Halal status for a flavouring extract is determined by whether ethanol is introduced at any stage of processing, not by branding decisions made afterward. A product cannot be extracted with ethanol and then certified Halal by omitting the word "alcohol" from the label. What buyers should verify before ordering
- Ask whether the extraction solvent is water or ethanol, specifically, not whether the finished product "contains no added alcohol", a phrasing that can technically describe a product where ethanol was used as a processing aid and later evaporated.
- Ask for the certification body and certificate number, and confirm it covers the specific product, not just the general facility.
- Understand that the flavour profile will differ slightly. Water carries a narrower range of aromatic compounds than ethanol, so a water-based extract is somewhat softer. In most bakery and beverage applications the difference is minor; where alcohol is not permitted, it is the direct substitute rather than a compromise.
